β Hilsa Fish (Ilish Machh) β 4 pieces
β Turmeric Powder β 1 tsp
β Salt β Β½ tsp
β Mustard Oil β 3 tbsp
β Ripe Tomatoes (chopped/pureed) β 3 large
β Onion Paste β 2 tbsp
β Garlic Paste β 1 tsp
β Ginger Paste β 1 tsp
β Green Chilies (slit) β 3-4
β Cumin Powder β Β½ tsp
β Coriander Powder β 1 tsp
β Red Chili Powder β 1 tsp
β Sugar β Β½ tsp (optional)
β Salt β To taste
β Water β Β½ cup
β Fresh Coriander (for garnish) β 1 tbsp
1οΈβ£ Wash the Hilsa fish pieces gently and pat dry.
2οΈβ£ Marinate with turmeric and salt.
3οΈβ£ Heat 3 tbsp mustard oil in a pan until it smokes, then lower the heat.
4οΈβ£ Lightly fry the fish for 2 minutes per side and set aside.
1οΈβ£ In the same oil, add onion paste and sautΓ© until golden brown.
2οΈβ£ Stir in ginger-garlic paste, cook until fragrant.
3οΈβ£ Add chopped tomatoes and cook until soft and pulpy.
4οΈβ£ Mix in cumin powder, coriander powder, red chili powder, and salt. Stir well.
5οΈβ£ Add Β½ cup water and let the gravy simmer for 5 minutes.
1οΈβ£ Gently place the fried Hilsa fish into the tomato gravy.
2οΈβ£ Cover and cook for 5 more minutes on low heat.
3οΈβ£ Add slit green chilies and a pinch of sugar for balance.
4οΈβ£ Turn off the heat and let it rest for a minute.
