β Turmeric Powder β Β½ tsp
β Salt β Β½ tsp
β Mustard Oil β 1 tbsp
β Green Chilies β 2 (slit)
β Potatoes (thinly sliced) β 1 medium
β Brinjal (cut into small pieces) β 1 small
β Pumpkin (cut into thin strips) β Β½ cup
β Onion (thinly sliced) β 1 medium
β Panch Phoron (Bengali five spice) β Β½ tsp
β Mustard Seeds Paste β 2 tbsp
β Turmeric Powder β Β½ tsp
β Red Chili Powder β Β½ tsp
β Green Chilies (slit) β 2-3
β Salt β To taste
β Mustard Oil β 3 tbsp
1οΈβ£ Marinate Hilsa Roe with turmeric, salt, mustard oil, and slit green chilies.
2οΈβ£ Place it in a steaming container or a covered bowl in a pressure cooker with little water.
3οΈβ£ Steam for 10 minutes until the roe is cooked and firm.
4οΈβ£ Let it cool and mash lightly with a spoon.
1οΈβ£ Heat 2 tbsp mustard oil in a pan.
2οΈβ£ Add panch phoron and let it crackle.
3οΈβ£ Add onions and sautΓ© until golden.
4οΈβ£ Add potatoes, pumpkin, and brinjal with a pinch of salt.
5οΈβ£ Sprinkle turmeric and red chili powder, then mix well.
6οΈβ£ Cover and cook on low heat until the vegetables are soft.
1οΈβ£ Add the steamed mashed Hilsa Roe to the pan and mix gently.
2οΈβ£ Stir in the mustard seed paste and cook for another 3-4 minutes.
3οΈβ£ Add slit green chilies and drizzle 1 tbsp mustard oil for extra aroma.
4οΈβ£ Cook until the oil separates and everything is well combined.
