β Hilsa Roe (Ilish Macher Dim) β 200g
β Turmeric Powder β Β½ tsp
β Salt β Β½ tsp
β Mustard Oil β 2 tbsp
β Onion Paste β 2 tbsp
β Ginger Paste β 1 tsp
β Garlic Paste β 1 tsp
β Tomato Paste β 1 tbsp
β Green Chilies (slit) β 3-4
β Mustard Seeds Paste β 2 tbsp
β Turmeric Powder β Β½ tsp
β Red Chili Powder β 1 tsp
β Salt β To taste
β Sugar β Β½ tsp (optional)
β Mustard Oil β 3 tbsp
β Water β Β½ cup
1οΈβ£ Clean the Hilsa Roe gently and pat dry.
2οΈβ£ Marinate it with turmeric and salt, then let it rest for 5 minutes.
3οΈβ£ Heat 2 tbsp mustard oil in a pan.
4οΈβ£ Fry the roe until golden brown on both sides. (Be gentle, as the roe is delicate.)
5οΈβ£ Remove from the pan and keep aside.
1οΈβ£ In the same pan, heat 3 tbsp mustard oil until smoking, then lower the heat.
2οΈβ£ Add onion paste and sautΓ© until golden brown.
3οΈβ£ Stir in ginger-garlic paste, cook until the raw smell disappears.
4οΈβ£ Add tomato paste and cook until oil separates.
5οΈβ£ Add turmeric, red chili powder, salt, and a little sugar. Stir well.
6οΈβ£ Pour in the mustard seed paste, stir, and cook for a minute.
7οΈβ£ Add Β½ cup water and bring the curry to a boil.
1οΈβ£ Gently place the fried Hilsa Roe into the bubbling curry.
2οΈβ£ Simmer for 2-3 minutes to absorb flavors.
3οΈβ£ Add slit green chilies and drizzle a little mustard oil for extra aroma.
4οΈβ£ Turn off the heat and let it rest for a minute.
