β Turmeric Powder β Β½ tsp
β Salt β Β½ tsp
β Mustard Oil β 2 tbsp
β Bitter Gourd (Karela), chopped β Β½ cup
β Green Banana (Kanchkola), chopped β Β½ cup
β Potato, diced β Β½ cup
β Drumsticks (Sojne Data), cut into pieces β 4-5 pieces
β Brinjal (Eggplant), diced β Β½ cup
β Flat Beans (Sheem), chopped β Β½ cup
β Radhuni (optional, substitute with celery seeds) β Β½ tsp
β Poppy Seed Paste (Posto Bata) β 1 tbsp
β Mustard Paste β 2 tbsp
β Milk β Β½ cup
β Panch Phoron (Bengali five-spice mix) β 1 tsp
β Bay Leaf β 1
β Turmeric Powder β Β½ tsp
β Salt β To taste
β Sugar β Β½ tsp
β Ghee β 1 tsp
β Mustard Oil β 3 tbsp
β Water β 1 cup
1οΈβ£ Wash and pat dry the Hilsa Roe.
2οΈβ£ Marinate it with turmeric and salt, then let it rest for 5 minutes.
3οΈβ£ Heat 2 tbsp mustard oil in a pan and fry the Hilsa Roe on both sides until golden brown.
4οΈβ£ Remove and keep aside.
1οΈβ£ In the same pan, add 1 tbsp mustard oil and fry the bitter gourd until lightly crisp. Set aside.
2οΈβ£ Add more oil if needed, then fry potatoes, green banana, drumsticks, brinjal, and flat beans one by one. Keep them aside.
1οΈβ£ Heat 1 tbsp mustard oil in a deep pan, add panch phoron, bay leaf, and a pinch of radhuni (if using).
2οΈβ£ Add the fried vegetables and stir well.
3οΈβ£ Mix in the poppy seed paste, mustard paste, turmeric powder, salt, and sugar. Cook for 2 minutes.
4οΈβ£ Add 1 cup water and let it simmer until the vegetables soften.
1οΈβ£ Gently break the fried Hilsa Roe into pieces and add it to the curry.
2οΈβ£ Pour in Β½ cup milk to give it a creamy texture. Stir gently.
3οΈβ£ Let it simmer for 2-3 minutes, then add fried bitter gourd and ghee for a rich aroma.
4οΈβ£ Turn off the heat and let it rest for a minute before serving.
