β 200g Hilsa fish roe (Ilish macher dim) β Β½ tsp turmeric powder β Β½ tsp salt
For Cooking:
β 2 tbsp mustard oil β Β½ tsp panch phoron (Bengali five-spice) β 1 dried red chili πΆ β 1 medium onion (finely chopped) β 1 tomato (chopped) π β 1 tsp ginger-garlic paste β 1 tsp red chili powder β Β½ tsp turmeric powder β 1 tsp cumin powder β 1 tbsp mustard paste β Β½ cup water β Salt to taste π§ β Fresh coriander leaves for garnish πΏ

Step 1: Marinate the Roe
πΉ Clean the Hilsa roe properly and pat dry. πΉ Mix with turmeric powder and salt. Keep aside for 10 minutes.
Step 2: Fry the Roe
π₯ Heat mustard oil in a pan until it starts smoking. π₯ Fry the marinated Hilsa roe until golden brown. Remove and keep aside.
π§ Pour water and let the gravy simmer. π₯ Add mustard paste and mix well.
Step 5: Add the Fried Roe
π Gently place the fried Hilsa roe in the gravy. π₯ Cook on low heat for 5 minutes, allowing flavors to blend.
Step 6: Garnish & Serve
