For the Hilsa Roe Preparation:

For the Mustard Paste:
β Yellow Mustard Seeds β 2 tbsp β Black Mustard Seeds β 1 tbsp β Green Chilies β 4-5 β Garlic Cloves β 2 (optional) β Salt β To taste β Water β As needed
For Paturi Bhapa:
β Banana Leaves β 2-3 large pieces β Mustard Oil β 3 tbsp β Slit Green Chilies β 3-4 β Grated Coconut β 2 tbsp (optional, for extra richness) β Thread or toothpicks β To secure the leaf wraps
1οΈβ£ Soak yellow and black mustard seeds in water for 10 minutes. 2οΈβ£ Blend with green chilies, garlic (if using), salt, and water to make a smooth paste.
2οΈβ£ Marinating the Hilsa Roe
1οΈβ£ Clean the Hilsa Roe and pat it dry. 2οΈβ£ Mix it with mustard paste, turmeric, salt, mustard oil, and grated coconut. 3οΈβ£ Let it marinate for at least 20 minutes.
3οΈβ£ Wrapping in Banana Leaves
1οΈβ£ Wash and cut banana leaves into square pieces. 2οΈβ£ Lightly heat the leaves over an open flame for a few seconds to make them pliable. 3οΈβ£ Place a portion of the marinated roe mixture onto a banana leaf. 4οΈβ£ Add a slit green chili and drizzle some extra mustard oil. 5οΈβ£ Fold the banana leaf into a tight parcel and secure it with thread or toothpicks.
4οΈβ£ Steaming the Paturi Bhapa
1οΈβ£ Place the wrapped parcels in a steamer or a covered pan with a little water. 2οΈβ£ Steam for 15-20 minutes on low heat until the roe is fully cooked and aromatic. 3οΈβ£ Carefully remove the parcels and let them rest for a minute before serving.
