For the Chorchori (Mixed Vegetable Stir Fry):
β Potatoes (cubed) β 1 medium β Brinjal (Eggplant, cubed) β 1 small β Pumpkin (cubed) β Β½ cup β Parwal (Pointed Gourd, sliced) β 2-3 β Ridge Gourd (Jhinge, sliced) β 1 small β Green Chilies (slit) β 3-4 β Panch Phoron (Bengali Five-Spice Mix) β 1 tsp β Turmeric Powder β Β½ tsp β Red Chili Powder β Β½ tsp β Salt β To taste β Sugar β Β½ tsp β Mustard Oil β 2 tbsp β Water β Β½ cup
1οΈβ£ Clean the Hilsa Head, pat dry, and marinate with turmeric & salt for 5 minutes. 2οΈβ£ Heat 3 tbsp mustard oil in a pan. 3οΈβ£ Fry the fish head pieces until golden brown and crispy. 4οΈβ£ Crush the fried head slightly and set aside.
1οΈβ£ Add the fried & crushed Hilsa Head to the vegetables. 2οΈβ£ Mix everything gently, ensuring the flavors blend well. 3οΈβ£ Let it cook uncovered for 2-3 minutes until slightly dry. 4οΈβ£ Drizzle some mustard oil on top for enhanced aroma.
