β Potato (cubed) β 1 medium β Pumpkin (cubed) β Β½ cup β Eggplant (cubed) β Β½ cup β Cauliflower Florets β Β½ cup β Tomato (chopped) β 1 medium β Onion (chopped) β 1 medium β Ginger Paste β 1 tsp β Garlic Paste β 1 tsp β Green Chilies (slit) β 3-4 β Bay Leaf β 1 β Cumin Seeds β Β½ tsp β Turmeric Powder β Β½ tsp β Red Chili Powder β 1 tsp β Coriander Powder β Β½ tsp β Garam Masala Powder β Β½ tsp β Salt β To taste β Water β Β½ cup
1οΈβ£ Clean the Hilsa Head thoroughly and pat dry. 2οΈβ£ Marinate with turmeric and salt for 5 minutes. 3οΈβ£ Heat 3 tbsp mustard oil in a pan until smoking hot. 4οΈβ£ Fry the Hilsa Head until golden brown on both sides. 5οΈβ£ Remove and keep aside.
1οΈβ£ Crush the fried Hilsa Head slightly and add to the vegetables. 2οΈβ£ Pour Β½ cup water and mix everything gently. 3οΈβ£ Cover and cook on low heat for 10 minutes, allowing the flavors to blend. 4οΈβ£ Sprinkle garam masala powder, add slit green chilies, and give a final stir. 5οΈβ£ Turn off the heat and let it rest for a few minutes.
