A traditional Bengali delicacy, Ilish Macher Matha Chorchori is a flavorful stir-fry made with Hilsa fish head and assorted vegetables. The rich taste of Ilish Mach enhances the dish, making it a perfect companion for steamed rice. This dish is often enjoyed during Sundarban Hilsa Festival when fresh Hilsa (Ilish) is abundantly available!

For the Hilsa Head Preparation:

โœ” Hilsa Fish Head (Ilish Macher Matha) โ€“ 1 large (cut into pieces)
โœ” Turmeric Powder โ€“ ยฝ tsp
โœ” Salt โ€“ ยฝ tsp
โœ” Mustard Oil โ€“ 3 tbsp

For the Chorchori (Mixed Vegetable Stir Fry):

โœ” Potatoes (cubed) โ€“ 1 medium
โœ” Brinjal (Eggplant, cubed) โ€“ 1 small
โœ” Pumpkin (cubed) โ€“ ยฝ cup
โœ” Parwal (Pointed Gourd, sliced) โ€“ 2-3
โœ” Ridge Gourd (Jhinge, sliced) โ€“ 1 small
โœ” Green Chilies (slit) โ€“ 3-4
โœ” Panch Phoron (Bengali Five-Spice Mix) โ€“ 1 tsp
โœ” Turmeric Powder โ€“ ยฝ tsp
โœ” Red Chili Powder โ€“ ยฝ tsp
โœ” Salt โ€“ To taste
โœ” Sugar โ€“ ยฝ tsp
โœ” Mustard Oil โ€“ 2 tbsp
โœ” Water โ€“ ยฝ cup


๐Ÿ‘ฉโ€๐Ÿณ Cooking Process

1๏ธโƒฃ Frying the Hilsa Fish Head

1๏ธโƒฃ Clean the Hilsa Head, pat dry, and marinate with turmeric & salt for 5 minutes.
2๏ธโƒฃ Heat 3 tbsp mustard oil in a pan.
3๏ธโƒฃ Fry the fish head pieces until golden brown and crispy.
4๏ธโƒฃ Crush the fried head slightly and set aside.

2๏ธโƒฃ Preparing the Chorchori

1๏ธโƒฃ In the same pan, heat 2 tbsp mustard oil and add panch phoron.
2๏ธโƒฃ When the spices splutter, add slit green chilies for aroma.
3๏ธโƒฃ Add cubed potatoes, sautรฉ for 2 minutes until lightly golden.
4๏ธโƒฃ Add brinjal, pumpkin, pointed gourd, and ridge gourd, mix well.
5๏ธโƒฃ Sprinkle turmeric, red chili powder, salt, and sugar, stir to coat.
6๏ธโƒฃ Cover and cook on low flame for 5-7 minutes, stirring occasionally.
7๏ธโƒฃ Add ยฝ cup water, cover, and let the vegetables soften.

3๏ธโƒฃ Final Touch โ€“ Adding the Hilsa Head

1๏ธโƒฃ Add the fried & crushed Hilsa Head to the vegetables.
2๏ธโƒฃ Mix everything gently, ensuring the flavors blend well.
3๏ธโƒฃ Let it cook uncovered for 2-3 minutes until slightly dry.
4๏ธโƒฃ Drizzle some mustard oil on top for enhanced aroma.
