This dish is slow-cooked using the โ€œBhapaโ€ (steaming) method, ensuring a melt-in-the-mouth experience. For the Bhapa (Steamed) Hilsa Roe:

โœ” Mustard Oil โ€“ 2 tbsp

For the Korma Gravy:

โœ” Onion Paste โ€“ 2 tbsp
โœ” Ginger Paste โ€“ 1 tsp
โœ” Garlic Paste โ€“ 1 tsp
โœ” Tomato Paste โ€“ 1 tbsp
โœ” Mustard Seeds Paste โ€“ 2 tbsp
โœ” Coconut Paste โ€“ 2 tbsp
โœ” Poppy Seeds Paste (Posto) โ€“ 1 tbsp
โœ” Yogurt (Beaten) โ€“ 2 tbsp
โœ” Turmeric Powder โ€“ ยฝ tsp
โœ” Red Chili Powder โ€“ 1 tsp
โœ” Salt โ€“ To taste
โœ” Sugar โ€“ ยฝ tsp (optional)
โœ” Green Chilies (slit) โ€“ 3-4
โœ” Mustard Oil โ€“ 3 tbsp

1๏ธโƒฃ Steaming the Hilsa Roe (Bhapa Method)

1๏ธโƒฃ Clean the Hilsa Roe gently and pat dry.
2๏ธโƒฃ Marinate with turmeric, salt, and 1 tbsp mustard oil, let it rest for 10 minutes.
3๏ธโƒฃ Take a steel or earthen pot, place the marinated roe, drizzle a little mustard oil, and add 2-3 green chilies.
4๏ธโƒฃ Cover tightly and steam it using a double boiler method (or pressure cook for 5 minutes without the whistle).

4๏ธโƒฃ Add tomato paste and cook until oil separates.
5๏ธโƒฃ Mix in turmeric, red chili powder, salt, and a pinch of sugar.
6๏ธโƒฃ Pour in the mustard seed paste, coconut paste, poppy seed paste, and beaten yogurt, stir well.
7๏ธโƒฃ Add ยฝ cup water, bring it to a boil, and let it thicken.

1๏ธโƒฃ Gently place the steamed Hilsa Roe into the simmering gravy.
2๏ธโƒฃ Let it cook for 2-3 minutes, allowing the flavors to blend beautifully.
3๏ธโƒฃ Add slit green chilies and drizzle some mustard oil for a signature aroma.
4๏ธโƒฃ Turn off the heat and let it rest for a minute before serving.
