βœ” Coriander Powder – Β½ tsp
βœ” Salt – To taste

1️⃣ Frying the Hilsa Roe

1️⃣ Clean the Hilsa Roe and pat dry.
2️⃣ Marinate with turmeric and salt, then set aside for 5 minutes.
3️⃣ Heat 2 tbsp mustard oil in a pan and fry the roe until golden brown on both sides.
4️⃣ Remove and keep aside.

2️⃣ Preparing the Stir-fry

1️⃣ In the same pan, add 2 tbsp mustard oil and heat until smoking.
2️⃣ Add chopped onions and sautΓ© until golden brown.
3️⃣ Add chopped garlic and slit green chilies, stir for a minute.
4️⃣ Sprinkle turmeric, red chili powder, cumin powder, and coriander powder. Mix well.
5️⃣ Crumble the fried Hilsa Roe into small chunks and add to the pan.
6️⃣ Stir-fry for 2-3 minutes, ensuring the roe is well-coated with the spices.
7️⃣ Check seasoning and adjust salt if needed.
